Pizzelle

        One of the many pizzelle varieties is chocolate.  There's something special about combining the anise flavor with chocolate that makes it very unique.  First you taste the chocolate, then the anise kicks in.  It's truly an experience you don't want to miss!

I go the extra step of drizzling melted chocolate on top.  Then again, why not?

     INGREDIENTS
     ½ cup butter
     ½ cup shortening
     6 eggs
     ½ cup of milk
     ½ teaspoon anise
     ½ teaspoon vanilla extract
     2 cups of sugar
     5 drops red food coloring
     2 ½ cups flour
     ½ cup of cocoa
     2 teaspoons baking powder
     ½ teaspoon salt

     2 TBL shortening and
     1 cup of chocolate chips melted in a double boiler

Plug in pizzelle maker to heat up.

Melt butter & shortening, mix and let them cool (but not thicken). Mix wet ingredients (eggs, milk, anise, vanilla, sugar, coloring). Add in butter/shortening.  In a separate large bowl mix dry ingredients (flour, cocoa, baking powder & salt). Create a well, lining edges of bowl with dry ingredients then pouring in wet. Mix thoroughly.

Drop large spoonfuls into pizzelle maker and take out promptly, as soon as molded to shape.

Melt 2 TBL shortening in double boiler then turn heat down very low.  Let chocolate sweat until melted.  When pizzelles are dry, drizzle chocolate by rapidly moving a spoon back and forth.  Leave out overnight to dry & set in flavor.
